Once you have availed yourself with a commercial dishwasher, and your catering business is beginning to grow, it may be time to start thinking about buying further additions for your machine. For example, if you have a stand-alone machine in a lonely corner of your kitchen, it could be a good investment to give it some company in the form of a sink, or even create some extra storage space by putting it on a special stand.

Obviously most kitchens will be already kitted out with sinks, but it is very rare that one, or possibly even two, will be enough. Food will need to be washed and prepared in the sink, and it would be extremely unhygienic to scrape dirty plates into the same sink where the vegetables are washed and peeled, so a second sink exclusively for your commercial dishwasher could be an excellent addition to the kitchen. This would also help divide your kitchen into areas for cleaning and cooking, creating a better sense of order. If space is an issue, a mini sink, a unit no bigger than a metre, long, would be able to be tucked in most corners, and this simple accessory would allow you to rinse dirty plates, avoiding having crockery coming out of the dishwasher still dirty and in need of a second wash.

With a little extra space and plumbing, it may even be worth installing a pre-wash spray unit. This special tap is a special shower for your plates, and takes out the need to wipe away the food and grease as you clean, simply blasting it off. It even allows you to set up a little production line for your commercial dishwasher, with one human dishwasher rinsing the plates, and another loading them into the dishwasher basket.

While a sink or a pre-wash spray may have your commercial dishwasher working as a model of efficiency, and eliminate all danger of your chefs and customers running out of plates and utensils, it may be too efficient - as strange as that sounds, during a quieter service, you may find that the clean plates outnumber the dirty, and you need storage space. It is easy enough to stack your plates, pans and glasses on shelving units, but this could actually become very unhygienic. The shelves would need to be cleaned every few days to ensure there is no build-up of dust, and any residual moisture on the glasses or plates could be left to stagnate, leaving faint spots and bacteria all over your supposedly clean crockery. To avoid this, you can purchase extra dishwasher baskets; not only will they give you extra containers for your excess plates, but they can also be used in the machine.

And what if you have limited space, and the shelf earmarked for your detergent and dishwasher cleaning products needs to be used to store other utensils or products? Simple - you can buy a stand; this will raise your dishwasher up, so there will be no complaints about sore backs from bending down to heave heavy baskets out of the machine, but there will be extra space for all your cleaning products - out of sight, away from food and crockery, and not likely to be tripped over by chefs in a hurry. With a few little extras, it is easy to make your commercial dishwasher an excellent component in a cleaner, more efficient kitchen.
